Individual coffee sponge cakes, for a treat

Recipe Ingredients for Coffee Cup Cakes

175 grams Egg
175 grams margarine
175 grams sugar
175 grams flour
1 tablespoon Coffee
2 tablespoons water
1/4 teaspoon baking powder

Recipe Directions for Coffee Cup Cakes

  1. Pre-heat oven at Fan 160c and prepare baking pan and cake cases

  2. Dissolve the coffee granules in the hot water

  3. Mix the Flour and 1/4 teaspoon of baking powder together

  4. Cream the margarine and sugar until light and fluffy

  5. Add the eggs (175 was 3 eggs) one at a time with a tablespoon of SR flour

  6. Add the coffee and flour and mix thoroughly

  7. Spoon into cake cases and bake in centre of oven for 15 to 18 mins. Until cakes are golden and a skewer when inserted and removed is clean.
