My family's classic recipe. Empty out four coffee cans and wash them out well to bake the bread in, and you get four round gift-size loaves that cut into about 8-9 slices each. (The tops are the BEST part!!)

Recipe Ingredients for Coffee-Can Pumpkin Bread

3 cups sugar
1 cup vegetable oil
4 eggs
1 tsp cloves
1 tsp ginger
1 tsp nutmeg
2 tsp cinnamon
2 tsp baking soda
3 1/3 cup all-purpose flour
2/3 cup water
15 oz pumpkin

Recipe Directions for Coffee-Can Pumpkin Bread

  1. Beat sugar, oil, and eggs together in a large bowl with electric mixer.

  2. Stir in spices and baking soda.

  3. Alternately add flour and water while continuing to mix at medium speed (be careful that you don't add too much flour or water at a time so it doesn't splatter).

  4. Optional: Stir in 1 cup chopped pecans (for additional nutritional value).

  5. Stir in pumpkin and mix until well-blended.

  6. Fill four coffee cans halfway with mixture and bake at 350 for one hour.
