We crumbled away some of the fat and calories that could be found in the typical coffee cake with this recipe. Equally delicious, but half the guilt.

Recipe Ingredients for Coffee Cake

1 cup granulated sugar
1/2 cup unsweetened applesauce
3 egg whites
1 tsp vanilla extract
8 ounces greek yogurt
1 1/2 cups self-rising flour
1 NLEA+Serving sugar free vanilla pudding
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1/4 cup brown sugar
2 tbsp cinnamon
1 cup walnuts

Recipe Directions for Coffee Cake

  1. Combine all dry ingredients: flour, pudding mix, baking powder, baking soda and salt. Put this aside.

  2. Mix sugar, applesauce, eggs, vanilla and yogurt until well combined. Sift in the dry ingredients.

  3. Pour into a 15x8x2 pan. Combine brown sugar, cinnamon and walnuts and crumble over the cake batter. Bake for 20-30 min at 350 degrees F.
