Recipe Ingredients for Coffee-Braised Pork Roast

2 c parsnip, chopped
1/2 large onion, chopped
3 medium red potatoes, chopped
6 lb Beef, Chuck, Blade Roast
5 T corn starch
5 T balsamic vinegar
3/4 c chicken broth
3 tsp sugar
1 1/2 c coffee
1 T canola oil
4 T chopped garlic
3 tsp salt
1 tsp white pepper
1 tsp dried thyme

Recipe Directions for Coffee-Braised Pork Roast

  1. Preheat oven to 300 degrees.

  2. Salt and pepper roast with 1 tsp salt and 1/2 tsp white pepper.

  3. Swirl bottom of heavy pot/dutch oven with oil, sear roast on medium heat on your stovetop for 5 min on each side, set aside.

  4. Add veggies to pot, stir occasionally while keeping lidded until onions are softened.

  5. While the veggies are cooking, combine the rest of the salt and pepper with the remaining ingredients.

  6. Deglaze bottom of pan with chicken broth, turn off stove.

  7. Place roast in the middle of the veggies and pour the coffee mixture over it.

  8. Cover and place in the middle of the oven. Bake for 3 hours, then let rest for 15 min.
