This dish is even better when left in the refrigerator overnight and can also be frozen. Top with green onions, fresh diced tomatoes, shredded cheese and/or sour cream if desired.

Recipe Ingredients for Cody?s Turkey Chili

2 teaspoons olive oil
2 cups onion, chopped
5 cloves garlic, minced
1 1/2 cups bell peppers, seeded and chopped
1 pound lean ground turkey
2 tablespoons chili powder
3/4 teaspoon crushed red pepper flakes (or to taste)
1 tablespoon paprika
1 tablespoon ground cumin
2 teaspoons dried oregano
1 teaspoon ground black pepper
1 teaspoons seasoned salt
1 tablespoon Worcestershire sauce
3 cups canned whole tomatoes, diced
2 tablespoons diced canned green chiles
8 ounce tomato sauce
15 ounce kidney beans, rinsed/drained
1 cup water
1/2 cup frozen corn kernels
1 tablespoon hot sauce (or to taste)

Recipe Directions for Cody?s Turkey Chili

  1. Heat the olive oil in a large pot over medium-low heat. Add the onion, garlic and bell pepper, cook and stir until the onion is transparent, being careful not to burn the garlic. Push to one side of the pot and add the ground turkey. Cover, and cook about 5 minutes, stirring occasionally to crumble the meat. Cook until no longer pink and then stir everything together.

  2. Add chili powder, red pepper flakes, paprika, ground cumin, oregano, black pepper and seasoned salt to the pot, stir until well combined. Stir in the Worcestershire sauce, diced tomatoes, green chiles, tomato sauce and kidney beans. Cover and simmer on low for about 30 minutes, stirring occasionally. Add water if the chili appears too thick. Continue simmering for another 30 minutes, stirring occasionally.

  3. Mix in the corn and add hot pepper sauce to taste, simmer for about 10 more minutes. Remove from heat and allow it to cool slightly before serving.
