Chinese-style rice congee with chunks of cod and diced veggies - the veggies are not a norm for this dish. Great comfort food for cold weather or a cold.

Recipe Ingredients for Cod & Veg Congee

150 g jasmine rice
2 stock cubes (use fish as this is a fish congee - no info in database)
700 ml water
140 g cod, cut into small cubes/chunks
1 tsp canola oil
1/4 tsp salt
2 g ginger, cut into thin strips
1 clove garlic, thin strips
30 g carrots, diced
40 g frozen green beans, diced
10 g leeks, thinly sliced
400 ml water
1 pinch white pepper
1/4 tsp sesame oil
1/2 tsp soy sauce
1 tsp dried chives

Recipe Directions for Cod & Veg Congee

  1. place the rice, stock cubes and 700ml water in a large pot and bring to the boil. Simmer for 15min. Remove from heat. Rice will absorb all the liquid and become quite stodgy.

  2. Sauté ginger, leek & garlic in canola oil, when just beginning to brown, add a pinch of salt and the beans. Cook for a minute.

  3. To the rice, add the 400ml water, chunks of cod and white pepper. Simmer till the fish is almost cooked.

  4. Add in carrots, and sautéed mix. When the carrots are soft remove from heat and add in soy sauce, sesame oil & corn kernels.

  5. Serve immediately in deep bowls. Garnish with a few slices of spring onions and chunks of Chinese 'dogbones' (a fried strip of airy dough - search on CC recipes for "Deep-Fried Dough Sticks").
