Cod with olives shallots and cherry tomatoes

Recipe Ingredients for Cod with tomatoe and olive tapernade

2 fillet Cod, Atlantic
200 grams Tomatoes
8 tbsp Green Olives
4 tbsp chopped Shallots
2 1tsp Olive Oil
1 dash Pepper, Black
3 tsp Vinegar red wine

Recipe Directions for Cod with tomatoe and olive tapernade

  1. Preheat oven to 200 degrees celsius

  2. Chop shallots and halve cherry tomatoes.

  3. Rub olive oil on cod and place on a sheet of tinfoil

  4. Add cherry tomatoes, shallots olives and vinegar to tinfoil wrap.

  5. Bake in oven for 20 mins.
