Cod with Lemon, Potatoes, and Olives

Recipe Ingredients for Cod with Lemon, Potatoes, and Olives

1 tsp olive oil
16 ounces yukon gold potatoes, cut into 3/4 inch pieces
1 fruit lemon, 1/2 sliced, 1/2 juiced
1/2 tsp oregano
1 clove garlic, smashed roughly
1/2 cup olives
8 ounces cod fillet

Recipe Directions for Cod with Lemon, Potatoes, and Olives

  1. Preheat oven to 450. Toss potatoes, lemon slices and garlic with 3/4 tsp olive oil, lemon juice, and oregano. Roast for 20 minutes, until potatoes begin to soften.

  2. Rub cod with remaining oil, sprinkle with salt and pepper, and place on top of potatoes. Roast 10 minutes, or until done through.
