Quick, easy and delicious cod casserole. A winner with the whole family

Recipe Ingredients for Cod Casserole

900 grams Cod
6 medium (2-1/4" to 3-1/4" dia.) Potatoes, Boiled
1.5 cup Milk, Nonfat, Fluid
1 medium raw Leeks
2 cup Frozen Green Peas
100 grams Cheese
1 dash Pepper, Black

Recipe Directions for Cod Casserole

  1. Preheat oven to 180C

  2. Boil potatoes in their jackets until just tender. Cool slightly then slice.

  3. Cut cod into 1 inch pieces and place in a layer on the bottom of baking dish.

  4. Chop leeks and add to dish in a layer.

  5. Add the peas evenly over this.

  6. Then layer sliced potatoes over the top.

  7. Add milk and pepper to season.

  8. Cover with foil and bake for 30 minutes.

  9. Remove foil and sprinkle with cheese.

  10. Return to oven until cheese browns

  11. Enjoy!
