Makes 24 cakes (appr. 1/2 cup of mix for each). Great with yogurt-dill dressing, and a wonderful alternative to a burger.

Recipe Ingredients for Cod Cakes

48 oz Cod, Pacific
1.5 cup, chopped Onions
1 cup Potatoes, Boiled, Cooked In Skin, Flesh
2 large Egg, Whole
3 tsp Country Dijon Mustard
1 tsp Kosher Salt
1/2 cup Panko Bread Crumbs
0.125 cup Parsley

Recipe Directions for Cod Cakes

Cook and flake the cod (baked dry or poached is easiest). Boil the potatoes, peel, then mash. Let the cooked fish and potatoes come to room temperature, then combine all ingredients. Form into 24 patties, and brown in a lightly oiled pan (or nonstick) until browned on both sides.
