Delicious and nutritious stew literally takes minutes to put together. I wanted a simple, yet tasty and nutritionally dense stew with a low calorie count so I kept the ingredients to a minimum. This stew has a gumbo flavored base so any seafood, vegetable addition would only enhance the flavor.

Recipe Ingredients for Cod and Cabbage Stew

56 oz diced tomatoes
24 oz garbanzo beans
2 lbs cod
2 T garlic
1 potato
1 T salt
1 tsp pepper

Recipe Directions for Cod and Cabbage Stew

  1. For the diced tomatoes, use the oregano, basil and garlic flavored 28-oz cans (two).

  2. Cube the potato; chop the cabbage and cod into bite-sized pieces.

  3. Combine all ingredients into a large stock pot. Add 2 1/2 cans of water (use tomato can).

  4. Cover and bring to a boil. Let simmer one hour.
