Recipe Ingredients for cocunut curry tofu

14 1/2 oz light coconut milk
1 tsp ginger
1/2 tsp crushed red pepper
1 tsp salt
4 cups broccoli
14 oz tofu
1 red pepper
5 oz mushrooms
3 1/2 tablespoon soy sauce
1/2 tsp brown sugar
6 green onions
1 1/2 tsp curry powder
1/4 cup fresh basil

Recipe Directions for cocunut curry tofu

  1. Bring coconut milk, ginger, red pepper, 3 TB soy sauce, and curry powder to a boil.

  2. Add veggies - cook covered 7 minutes

  3. Add basil, remaining soy sauce, and salt to taste. Cook 3 more minutes until veggies are tender.
