Vegetarian/vegan brownies with apple and pumpkin. Vegans use dairy-free chocolate chips.

Recipe Ingredients for CocoPunkin Brownies

2 cups spelt flour
1 cup Brown Sugar
1 cup apples, pureed
1 cup chocolate chips
1 3/4 cup pumpkin (1 15 oz can)
1/4 cup Olive Oil
1/2 cup Walnuts, chopped
8 oz cocoa powder
1 tsp Vanilla Extract
1 tsp Baking Powder

Recipe Directions for CocoPunkin Brownies

  1. Preheat the oven to 350oF.

  2. Combine the dry ingredients in a mixing bowl. Stir in the wet ingredients. If desired, add chocolate chips and/or chopped walnuts to the mix.

  3. Pour mixture into a greased 9"- x 13"-inch baking pan, and bake for 20 to 30 minutes. (For moister brownies, bake 20 to 25 minutes.)

  4. Let the brownies cool slightly before serving.
