Healthy snack bars filled with fiber and healthy fats from coconut, apricots and cashews. Chewy, sweet, crunchy, and totally delicious! Also, couldn't be easier to make or adjust to your tastes.

Recipe Ingredients for Coconutty Apricot Energy Bars

1 cup, halves Apricots, Dried, Sulfured, Uncooked
1 cup, halves and whole Cashew Nuts, Dry Roasted
28.3 grams Coconut Meat, Dried (Desiccated), Not Sweetened
0.5 tbsp Coconut Oil, Unrefined, Organic

Recipe Directions for Coconutty Apricot Energy Bars

Blitz all ingredients in a food processor until starts to come together and nuts are in small pieces. Press into a small pan, lined with parchment and lightly greased. Refrigerate until set and cut into bars.
