Recipe Ingredients for Coconut Veggie Rice

1 tablespoon Olive Oil
2 zucchinis
2 yellow squash
16 ounces spinach (fresh bag)
1 pint mushrooms
2 cups brown rice
1 teaspoon cumin
1/2 teaspoon pepper
1 teaspoon salt

Recipe Directions for Coconut Veggie Rice

  1. Chop veggies

  2. sautee zucchini and squash in olive oil

  3. add spinach and mushroom and cook until spinach reduces

  4. add coconut milk and spices to taste

  5. stir in prepared brown rice and enjoy!
