Use lite coconut milk instead of the coconut milk+water; this makes a lot of sauce, so feel free to up the veggies

Recipe Ingredients for Coconut Vegetable Curry

1 small onion, minced
1 tbsp ginger, minced
3 cloves garlic, minced
2/3 cup coconut milk
1 3/10 c water
1 1/2 tsp curry powder
2 tsp chili paste
1 tbsp olive oil
1 tbsp soya sauce
1 cup cabbage
2 cups cabbage
2 medium carrots
1 red pepper
3/4 cup mushrooms

Recipe Directions for Coconut Vegetable Curry

  1. Saute garlic, onion, ginger, curry, chili paste, and soya sauce.

  2. Add coconut milk and bring to a boil.

  3. Add cabbage, carrot and cauliflower, cook 15 minutes over medium heat

  4. Add mushrooms and red pepper, cook for 5 more minutes.

  5. Serve with rice or quinoa.
