Recipe Ingredients for Coconut Tofu Shirataki Noodles

4 oz button mushrooms, sliced
2 oz prawns
16 oz Tofu Shirataki Noodles, 2 packages
1/2 cup coconut milk
1/2 cup vegetable broth
1 T cornstarch, mixed with 1/4 cup water
1 T garlic
1 T ginger, grated
1 1/2 T lemongrass
1 t curry or 1/4 t ground cayenne
1 T lime juice, plus zest
1 T soy sauce
1 t brown sugar
2 T cilantro, chopped
1 salt

Recipe Directions for Coconut Tofu Shirataki Noodles

  1. Spray pan with PAM

  2. Stir Fry sliced Mushrooms and Shrimp.

  3. Add Noodles that have been rinced/prepared -then well drained and dried off with paper towel (noodles get a chance to dry out a little more in the stir-fry)

  4. In seperate pan, combine remaining ingredients (except cilantro) over medium heat and cook for 5-7 minutes.

  5. Throw on-top of stir-fry with noodles and mix well to warm

  6. Add fresh cilantro just before serving
