Recipe Ingredients for Coconut tofu keema

3 tablespoons light olive oil
1/4 orange bell pepper
1/8 red bell pepper
4 cloves garlic, diced
1/2 small onion, diced
14 ounces firm tofu, cubed
16 ounces coconut milk
2 teaspoons cumin powder
2 teaspoons curry powder
2 teaspoons ginger powder
1 teaspoon salt
2 teaspoons black pepper
2 teaspoons red pepper flakes
4 cups tomato sauce
2 medium red potatoes
2 cup frozen mixed vegetables

Recipe Directions for Coconut tofu keema

Heat oil over medium heat in a large skillet. Add garlic, onion, and tofu, and cook 5-10 minutes. Add coconut milk, spices, and tomato sauce, and bring to a simmer. Add vegetables and simmer, covered, for about 30 minutes, until vegetables are tender.
