Recipe Ingredients for Coconut Tofu Keema

2 tbsp. vegetable oil
4 cloves garlic, pressed
1 medium onion, minced
14 ounce extra firm tofu, diced
14 ounce lite coconut milk
1 tbsp. ground cumin
1 1/2 tsp. curry powder
1 1/2 tsp. grated ginger
1 tsp. salt
1 3/4 cups diced tomatoes
1 1/2 cups frozen peas, thawed
1 1/2 cups carrot, chopped

Recipe Directions for Coconut Tofu Keema

Heat olive oil in a large saucepan over medium heat. Stir in garlic, onion, and tofu and cook, stirring occasionally for 5 to 10 minutes. Stir in coconut milk, cumin, curry powder, ginger, salt, (optional: add 1 tbsp. of red pepper paste or 1/4 tsp. cayenne pepper if you like your food to be spicy); bring to a simmer. Stir in tomato sauce, peas, and carrots; simmer, covered, about 30 minutes.
