Recipe Ingredients for coconut and spice rice

2 tbsp coconut, shredded
1 tbsp olive oil
400 g white rice, long grain
165 ml coconut milk
1 tsp curry powder
2 leeks, sliced
80 g cashew nuts, diced

Recipe Directions for coconut and spice rice

  1. heat up the oil in a large pan. fry the nuts until they are golden, and add the shredded coconut. fry until golden, and an aroma of coconut rises.

  2. Add the coconut milk and about 8 dl of water. Boil up, add the leeks and curry powder, together with some salt. Cook for 2 minutes.

  3. Add Rice and boil up. Reduce heat and cover. Let simmer for about 20 minutes, or until the rice is moist and yummy.

  4. Serve with fresh chives, chopped, and boiled broccoli or bread.
