LIghter recipe for those that love seafood, but don't want all the calories that go with it.

Recipe Ingredients for Coconut Shrimp

12 oz Raw Peeled Large Pacific White Shrimp
3 oz Coconut Meat, Dried (Desiccated), Not Sweetened
5 grams Sea Salt
0.5 tsp Pepper, Black
1/4 cup White Flour, Unbleached
1 large Egg, White
1 tsp Lemon Peel

Recipe Directions for Coconut Shrimp

  1. Peel shrimp if necessary, add zest and marinade for 3-4 hours.

  2. Preheat oven to 450 degrees. Combine panko, coconut, salt and pepper. Place flour on separate plate, add shrimp to coat. Place in egg white, then in Panko mixture. Place on nonstick baking sheet and bake 10-15 minutes until crispy and cooked.
