Recipe Ingredients for Coconut Rice

1 cup Mahatma Jasmine Enriched Thai Fragrant Long Grain Rice
1 1/4 cup Soup, Chicken Broth
1 cup Lite Coconut Milk

Recipe Directions for Coconut Rice

  1. combine stock, coconut milk and salt in saucepan over medium-high heat and bring to a near boil. Reduce heat to low. Add the rice and stir constantly for 1 minute. Cover the pan and simmer over low heat, without stirring, for 15 minutes or until the rice is almost tender.

  2. Remove the pan from the heat and let the rice stand, still covered, for 10 minutes or until tender and all liquid absorbed. Lightly fluff rice with a fork.

  3. Transfer to bowls and serve.
