Use reduced fat coconut milk to reduce calories

Recipe Ingredients for Coconut Rice

400 ml long grain white rice
400 ml coconut milk
200 ml water

Recipe Directions for Coconut Rice

  1. Rinse rice.

  2. Shake can of coconut milk well.

  3. Put rice, water and coconut milk in medium pot and stir together

  4. Bring to a boil, then turn off heat and let sit on burner for 20 min.

  5. Fluff rice and serve.
