This Caribbean favorite is often doen with pigeon peas or some sort of red bean. For fewer calories, it can be made with coconut water, but you have a sweeter rice dish. Most people overindulge in this dish and take far more than the 1/2 cup serving size, so beware! It's good.

Recipe Ingredients for Coconut rice

15 oz pinto beans
1 cup rice, dry
1 cup coconut milk, light
1 cup chicken broth
1/4 tsp black pepper

Recipe Directions for Coconut rice

  1. Boil coconut milk and chicken broth.

  2. Add rice and pepper

  3. Simmer for 10-12 minutes

  4. Add beans and simmer until the rice is done (about 10-15 more minutes)
