Goes great with Thai Basil Chicken

Recipe Ingredients for Coconut rice

1 cup basmati rice
3/4 cup lite coconut milk
1/4 cup nonfat chicken broth
2 tsp sugar
1 tsp salt
1 tbsp butter without salt
1 tbsp lime juice

Recipe Directions for Coconut rice

  1. Put milk, broth, salt and sugar in saucepan and bring to a boil.

  2. Add rice, reduce heat to low/simmer and cook for 10-15 minutes.

  3. When done, finish with butter and lime juice.
