A varation on traditional rice pudding.

Recipe Ingredients for Coconut Rice Pudding

1 cup rice, cooked
1/2 cup coconut milk
3/4 cup skim milk
1/4 cup sugar
3/4 tsp. ground cinnamon, more if desired
1 dash vanilla

Recipe Directions for Coconut Rice Pudding

  1. Note: this tastes best with jasmine rice.

  2. After cooking jasmine rice per packet instructions, stir in coconut milk and whole milk. Simmer until liquid is mostly absorbed (about 10 minutes or so), then add sugar, cinnamon, and vanilla flavoring. Serve warm or chilled.
