Recipe Ingredients for Coconut Rice Pudding

4 eggs
1/3 c sugar
1/2 tsp salt
1 1/2 c coconut milk
1 1/2 c skim milk
3 c rice, cooked
1/2 c coconut, shredded

Recipe Directions for Coconut Rice Pudding

  1. Preheat oven to 350.

  2. Blend together eggs, sugar and salt.

  3. Bring to a simmer, coconut milk and milk.

  4. Slowly combine milk(s) with the egg mixture.

  5. Add rice and shredded coconut.

  6. Pour into a baking dish.

  7. Cook in a water bath, 1 1/2 to 2 hours.

  8. Pudding is done when a knife inserted in the center of the pudding comes out clean.
