1 cup jasmine rice
1 1/2 cups light coconut milk
1/2 cup water
1 cup pineapple, diced
1 cup green peas, frozen

Recipe Directions for Coconut Rice with Pineapple and Peas

add coconut milk and water to rice. Bring to boil, then turn heat to low and cook for 20 minutes. Stir in diced pineapple and peas; return to low heat until heated through. Serves 6 generously.
