An interesting combo of coconut milk and pumpkin- perfect for fall!

Recipe Ingredients for Coconut Pumpkin Chowder

12 fl oz Organic Premium
1 cup Chicken Broth
1 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
1 cup, cubes Yam
1 1/4 cup Sweet Peas
1 tsp Ginger, Ground
1 dash Salt, Table
1/2 cup Pumpkin
8 oz Shrimps
2 tbsp Fish Sauce
3 wedge yields Lime Juice
3 tbsp chopped Shallots

Recipe Directions for Coconut Pumpkin Chowder

Heat 1 tsp olive oil in a medium saucepan. Add ginger and shallot- saute until tender. Combine other ingredients (except shrimp and cilantro) in saucepan. Boil. Return to simmer for 10-15 minutes or until potatos are tender. Add shrimp in the last few minutes, until they turn opague. Serve hot with sprigs of cilantro.
