tasty fast curry - this is written off the cuff, quantities of ingredients can be changed to taste (like coconut milk to water ratio).

Recipe Ingredients for Coconut potato curry

6 medium potatoes
1/2 onion
4 cloves garlic
2 cups lite Coconut Milk
1 tablespoon butter
1 turmeric to taste
1 cayenne to taste
1 cup quinoa

Recipe Directions for Coconut potato curry

  1. boil potatoes (quartered) in coconut milk + 1 can water

  2. in the meantime, brown onions and garlic

  3. when potatoes are soft, add turmeric and cayenne to taste, plus onions and garlic.

  4. Simmer for 5 minutes

  5. serve with rice or quinoa
