Recipe Ingredients for Coconut Pecan Frosting Lite

1 c coconut (grated)
1 c pecans (chopped)
1 c cold water
1/2 c sugar
1/2 c Splenda no-calorie
2 tbsp corn starch
1/4 tsp salt
1 tsp vanilla
2 tbsp Smart Squeeze Spread

Recipe Directions for Coconut Pecan Frosting Lite

  1. Mix sugar, Splenda, salt, and corn starch together

  2. Lightly toast the grated coconut and pecans at 350 for about 8 minutes.

  3. Whisk the sugar mixture into the water.

  4. Heat over medium heat, stirring constantly until thickened and translucent.

  5. Remove from heat

  6. Stir in vanilla and Smart Squeeze (or use light margarine)

  7. Stir in the toasted pecans and coconut.
