Recipe Ingredients for Coconut PB & Oats Cookies

12 oz Regular Creamy
2 tbsp Extra Virgin Olive Oil
1 large Egg, Whole
4 tbsp Brown FlaxSeed Meal
1/4 cup Whole Wheat Flour
3/4 cup White Flour, Unbleached
1/2 cup Coconut Meat, Dried (Desiccated), Sweetened, Flaked, Packaged
4 tsp Sugars, Granulated
2 tsp unpacked Sugars, Brown
0.13 cup, unpacked Sugars, Brown
1 oz (60 raisins) Raisins, Seedless
1/2 tsp Baking Powder
3 tablespoons Almond or Soy Milk

Recipe Directions for Coconut PB & Oats Cookies

  1. Preheat oven to 350 degrees.

  2. Cream peanut butter, olive oil and egg. Add flax seed and sugars; mix.

  3. Add Almond or Soy milk; stir.

  4. Stir in flours and raisins.

  5. Shape walnut sized balls and flatten with hand. Place on ungreased cookie sheet a few inches apart.

  6. Cook 8-10minutes until brown on bottom.
