The yummiest delectable oatmeal ever! It's got an especially sweet taste from the dried papaya. =]

Recipe Ingredients for Coconut Papaya Oats

1/4 cup steel cut oats
3/4 cup water
1/2 cup fat free cottage cheese
1 small (73g) banana
1 Coconut cream pie larabar
1 (35g) dried diced papaya

Recipe Directions for Coconut Papaya Oats

  1. Bring 3/4 cups of water to a boil. Add the cottage cheese and steel cut oats and let simmer for 1-2 minutes (while stirring). Cover oats and refridgerate overnight.

  2. Next morning, cook oats on low heat for about 12-15 minutes while stirring occasionally. While cooking, mix in the mashed banana, and crumbled up Larabar, letting it melt into the oatmeal. After the oatmeal is done cooking and has thickened up, stir in the papaya.

  3. Mmm yum. =]
