Recipe Ingredients for Coconut Oatmeal Drop Cookies

1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon salt
1 cup unsalted butter
1 cup light brown sugar, firmly packed
1/2 cup granulated sugar
1 large egg
1 1/2 teaspoons vanilla extract
1 1/2 cups rolled oats
1 cup coconut

Recipe Directions for Coconut Oatmeal Drop Cookies

  1. Preheat oven to 375 degrees.

  2. In a small bowl, combine the flour, baking soda, cinnamon, and salt. Set aside.

  3. In a large bowl, cream the butter with the sugars until smooth, about 2 minutes. Add the egg and vanilla, and beat well. Add the dry ingredients and mix thoroughly. Stir in the oats and coconut. Drop by rounded teaspoonfuls onto ungreased cookie sheets, leaving several inches between for expansion. Bake for 12-14 minutes, or until lightly golden.

  4. Cool the cookies on the sheets for 5 minutes and then remove to a wire rack to cool completely.
