Recipe Ingredients for Coconut-oatmeal chewies (cookies)

2 c flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
2 sticks unsalted butter
1 c brown sugar
1/2 c granulated sugar
2 eggs
1 tsp vanilla extract
3 c rolled oats
3/4 c shredded coconut
3/4 c walnuts
1/2 c raisins
1/4 c cranberries

Recipe Directions for Coconut-oatmeal chewies (cookies)

  1. Whisk together flour, baking soda, baking powder and salt in a bowl. Set aside.

  2. Using a hand mixer on medium speed, cream butter (softened), brown sugar, and granulated sugar in a large bowl until mixture is light and fluffy, about 5 minutes.

  3. Add eggs and vanilla to creamed mixture; beat on low speed until well blended. Add half of the flour mixture; beat on low speed until ingredients are combined. Add remaining flour, beating only until flour is incorporated into dough.

  4. Fold oats, coconut, walnuts, and raisins/ cranberries into dough with a spoon until evenly distributed. Cover the dough; chill at least 1 hour.

  5. Preheat oven to 350F; line cookie sheets with parchment paper.

  6. Drop mounds of dough (each about 1 1/2 tbsp) onto prepared cookie sheets, spacing cookies 2 inches apart.

  7. Bake cookies, one sheet at a time, until they're golden but still a little moist, 11-13 minutes. Let cookies cool on cookie sheets for 5 minutes, then transfer to a rack to cool completely.
