Recipe Ingredients for Coconut Macaroon

4 large egg whites
1 1/3 cup powdered sugar
1/4 cup flour
1/2 tsp. salt
1 tbsp. vanilla extract
1 tsp. coconut extract
4 cups shredded coconut

Recipe Directions for Coconut Macaroon

  1. Position a rack in the upper third of the oven and preheat the oven to 300 F.

  2. In the bowl of an electric mixer, beat the egg whites on medium-high speed until they form stiff peaks. Gradually beat in the powdered sugar, then beat in the flour, salt, vanilla, and coconut extracts, mixing only to combine. Stir in the shredded coconut.

  3. Using a small ice cream scoop, form 24 mounds of dough 2 in. apart on 2 ungreased cookie sheets. Bake one sheet at a time until golden brown, 15 to 20 minutes. Allow the macaroons to cool completely on the cookie sheets on wire racks before removing them.
