Coconut Lentil Soup Recipe

Found this on RecipeZaar. Didn't have all the ingredients and added a few of my own to make it to my liking. Wanted to save on here for my own purposes and also to share with you! Even with the water I added, it came out a little on the thick side, and I bet if you were a little modest with the water, you could make more of a... well, I don't know what you'd call it, but you could serve it over rice or something. I feel this is an easy recipe to get creative with. Both in its preparation and execution, if you will.

Recipe Ingredients for Coconut Lentil soup

1 cup dried lentils
1 garlic clove
1 tablespoon olive oil
1 teaspoon dry mustard
14 1/2 oz chicken stock (low soduim/no soduim added)
14 1/2 oz water
14 1/2 oz crushed tomatoes (low soduim/no soduim added)
13 1/2 oz coconut milk
2 tsp cayenne pepper
1/2 tsp cinnamon
2 tsp brown sugar
1 tsp lime juice

Recipe Directions for Coconut Lentil soup

  1. Rinse and dry lentils

  2. Heat oil in medium sized pot.

  3. Mince and sautee garlic.

  4. Add 1 can chicken stock and half a can of water, crushed tomatoes, lentils and dry mustard (or tumeric). Bring to boil and simmer for about 20 min.

  5. Using immersion blender, or by pouring soup (or goop!) into a normal blender, blend.

  6. Add coconut milk (shake can first!) and more water, if the soup is too thick (about half a can).

  7. Add cayenne pepper, cinnamon, brown sugar and lime juice to taste. A touch of each or so.
