Recipie also calls for 1 c walnuts & 1/2 c raisins. I just put this recipie in here to try to figure out calories. I haven't baked it. Recipie is from Company's Coming Squares cookbook.

Recipe Ingredients for Coconut Lemon Bars

1/2 c butter
1/2 c brown sugar, packed
1 c all-purpose flour
2 eggs
1 c brown sugar, packed
2 tbsp lemon juice
1 tsp lemon rind
1/4 tsp salt
1 c shredded coconut

Recipe Directions for Coconut Lemon Bars

  1. Bottom layer: combine first 3 ingredients together until mealy. Press into ungreased 9 x 9 inch pan. Bake at 350 F for about 10 minutes

  2. Second Layer: Beat eggs until frothy. Add rest of ingredients. Stir to mix. Pour over bottom layer. Bake in 350 F oven for about 25 minutes or until golden brown. When slightly cooled cut into 36 squares.
