Gently steamed fish in a flavorful Thai inspired sauce.

Recipe Ingredients for Coconut Halibut

1 tsp Canola Oil
1/4 cup Shallot, minced
1/4 tsp Curry Powder
1/2 cup Chicken Stock
3 tbsp Light Coconut Milk
1 tsp Honey
1/8 tsp Salt
6 oz Halibut
2 tbsp Cilantro, chopped
1 tbsp Green Onion, chopped
1/2 tbsp Lime Juice
2 tsp Cornstarch
2 tsp Water
4 cups Spinach
2/3 cup Brown Rice, cooked

Recipe Directions for Coconut Halibut

  1. Heat oil in a saute pan & add shallot.

  2. Cook shallot 3-4 minutes until tender.

  3. Add curry paste and cook stirring constantly for 30 seconds or until spices become fragrant.

  4. Add chicken stock, coconut milk & salt to the pan.

  5. Bring sauce to a simmer and cook 3-4 minutes.

  6. Add halibut to sauce & cover pan.

  7. Cook 6-7 minutes.

  8. Toss spinach into a hot saute pan with 2 tsp of water & cook 2-3 minutes until wilted.

  9. Layer rice & spinach on a serving plate, top with halibut.

  10. Mix lime juice, cornstarch & water then whisk into sauce & bring to a simmer.

  11. Ladle sauce over fish, rice & spinach. Garnish with cilantro.
