Recipe Ingredients for Coconut Ginger Stir Fry

3 cups cooked brown rice
3 cups cooked lentils
8 cups mixed vegetables, of choice, sautéed

Sauce:
2 c. water
1 tbsp. salt
1/4 tsp. pepper
4 cloves garlic, pressed
2 tbsp ginger, diced
1/2 cup cilantro, fresh
1 tsp dried basil
14 oz. coconut milk
3 tbsp soy sauce
1/2 tsp. turmeric
1/4 cup lemon juice
4 tbsp. maple syrup
1/4 cup corn starch, mixed with 1 1/4 cup water

Recipe Directions for Coconut Ginger Stir Fry

  1. Stir fry the vegetables.

  2. Mix lentils and rice together.

  3. Sauce:

  4. Add all to a sauce pan. Bring to a boil and add corn starch mixture.

  5. Stir while boiling for 2 minutes, then remove from heat and let sit 5 minutes.

  6. Serve:

  7. Place one scoop of rice mixture, top with vegetables and drizzle with sauce.
