Recipe Ingredients for Coconut Fish Stew With Basil And Lemongrass

1/2 tablespoon vegetable oil
1/2 cup shallots, thinly sliced
1 clove garlic, minced
2 1/2 cups chicken stock
9.21 ounce coconut milk
4 T lemongrass, finely chopped
1 jalapeno pepper, seeded, if desired, and thinly sliced
2 tablespoons rice vinegar
1 tablespoon fish sauce
1 tablespoon light brown sugar
3/4 teaspoon salt
1 T lime zest
1 pound prawns
2 tablespoons cilantro, chopped fresh
2 tablespoons basil, chopped fresh
1 lime juice to taste

Recipe Directions for Coconut Fish Stew With Basil And Lemongrass

  1. Serve with Cooked rice, if desired

  2. I used a 13.5 oz can of "A taste of Thai" coconut milk which had fewer calories than the default caloriecound coconut milk, so I calcated the # of ounces of the default that equals 13.5 oz of the lower calorie version.

  3. Can use halibut or a combination of 3/4 pound seafood, such as snapper or other firm fish (cut into 1 1/2-inch chunks), peeled shrimp and/or scallops, or a combination

  4. Heat the oil in a medium pot over medium heat. Add the shallots and garlic and cook, stirring, until the shallots are softened, 3 to 5 minutes. Stir in the stock, coconut milk, lemongrass, jalapeno pepper, vinegar, fish sauce, sugar, salt and lime zest. Simmer for 10 minutes.

  5. Stir in the seafood and herbs. Cook 2 to 3 minutes. Stir in the lime juice and serve with rice, if desired. (Note: Without rice, it's more of a soup than a stew.)
