Light fresh fruit cake that can be used for dessert or special occasion.

Recipe Ingredients for Coconut Feijoa Cake

150 grams Butter
1.5 cup Sugars, Granulated
4 large Egg, Whole
8 oz Coconut Meat, Dried (Desiccated), Not Sweetened
2 cup Wheat Flour, White, All-purpose, Enriched, Bleached
2 tsp Baking Powder
1 cup Milk, Lowfat, Fluid, 1% Milkfat

Recipe Directions for Coconut Feijoa Cake

  1. Beat the butter and sugar together until creamy. Beat in the egg yolks.

  2. Fold in the coconut and dry ingredients with the milk and the fruit, peeled and chopped.

  3. Beat the egg whites until stiff and fold into the cake mixture.

  4. Turn into a well greased or lined cake tin.

  5. Bake at 180* c for 1 hour until cooked. Cool for 10 minutes before turning out.
