Recipe Ingredients for Coconut Drop Cookies

1 cup butter
2 tbsp butter
1/2 cup sugar
1/2 cup brown sugar
2 eggs
1 tsp vanilla extract
2 cups flour
2 cups oats
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 cups flaked coconut
1 cup chopped walnuts

Recipe Directions for Coconut Drop Cookies

  1. In a large mixing bowl, cream the shortening and sugars. Add eggs, one at a time, beating well after each addition. Beat in vanilla.

  2. Combine the flour, oats, baking powder, baking soda, and salt; gradually add to creamed mixture and mix well. Stir in coconut and walnuts.

  3. Drop by rounded tablespoonfuls onto greased baking sheets. Flatten slightly.

  4. Bake at 350 degrees for 11-14 minutes or until golden brown. Cool for 2 minutes before removing to wire racks. Store in an air-tight container.
