Recipe Ingredients for Coconut curry shrimp

2 tbsp orange juice
1 tbsp fish sauce
1 tsp cornstarch
2 tsp soy sauce, low sodium
1 tsp canola oil
8 shrimp, large
1 onion, chopped
1 clove garlic, minced
1/2 tsp curry powder, green
1 red bell pepper, sliced
1/4 cup light coconut milk
1 tbsp lime juice
1 tsp Splenda
1/4 cup cilantro, chopped
1 tbsp peanuts, unsalted

Recipe Directions for Coconut curry shrimp

  1. Whisk the orange juice, fish sauce, cornstarch, soy sauce and canola oil together. Stir in the shrimp and marinate for 5 min..

  2. Heat the oil in a lg skillet over medium high heat. Add the onion and garlic and saute for 5 min. Add the curry powder and cook for 1 min.. Add the red peppers and shrimp and cook for 2-3 min..Stir in the coconut milk, lime juice and Splenda and cook for an additional 2 min..

  3. Garnish with the cilantro and peanuts. Serve.
