A great sauce for grilled shrimp and rice.

Recipe Ingredients for Coconut Curry Sauce

1 clove garlic, minced
1 teaspoon sesame oil
1 teaspoon red chili paste
12 ounce coconut milk
2 teaspoons curry powder
1/2 teaspoon salt
1/2 cup chicken broth
1 cup baby spinach

Recipe Directions for Coconut Curry Sauce

  1. Heat oil and saute for 5 minutes. Add chili paste, coconut milk, curry, broth, salt and pepper and simmer for 15 minutes.

  2. Put spinach in food processor and puree. Add to soup and heat until mixture is thickened.

  3. Divide between four plates and pour over tofu or shrimp and rice.
