2 cups rice
1 3/5 cups coconut milk
1 cup vegetable broth
1 yellow bell pepper
1 clove garlic
2 tablespoons ginger
1 pound snow peas
1 onion
1 tablespoon curry

Recipe Directions for Coconut Curry Rice with Snow Peas

  1. Dice and stirfry all vegetables excluding the snow peas. Wash and prep snow peas, add to pan.

  2. Add rice and fry until translucent. Add coconut milk, vegetable broth, and curry. Cover and cook for 10-15 minutes.
