Recipe Ingredients for Coconut Curried Vegetables

1 serving Grace Pure Creamed Coconut (1/2 pkg)
0.13 cup slices (1" dia) Ginger Root
1.5 cup (8 fl oz) Water
6 tsp Curry Powder
1 tsp Sea Salt
4 cup, chopped Broccoli
4 cup Cauliflower
1 cup chopped Red Onion
1 serving Omega Nutrition Coconut Oil (1 TBSP)

Recipe Directions for Coconut Curried Vegetables

  1. Melt 1 TBSP coconut butter in a hot wok.

  2. Add one cup of chopped red onions.

  3. Add 1/8 cup chopped fresh ginger.

  4. Let this simmer for approximately 5 minutes.

  5. Meanwhile blend Grace Creamed Coconut with 1/2 cup water. Set aside.

  6. Add broccoli and cauliflower to ginger/onion mixture.

  7. Panfry on medium to high heat for a few minutes, stirring often.

  8. Add 1 cup water, and turn heat down to medium heat.

  9. Cover walk and let simmer for 5-10 minutes or until vegetables are desired softness.

  10. Add coconut sauce and blend with rest of vegetables.

  11. Let mixture simmer until it reaches desired thickness.

  12. Serve over rice if desired.
