Recipe Ingredients for Coconut Cupcakes

22 oz Butter
2 cup Sugars, Granulated
4 serving (Naturally Preferred) Cage Free Grain Fed Brown Eggs
2 tsp Vanilla Extract
2 tsp Almond Extract
3 cup Gold Medal All Purpose Flour
0.5 Teaspoon Baking Powder
0.5 tsp Leavening Agents, Baking Soda
0.5 tsp Salt, Table
1 cup Coconut Milk
12 oz Flake Coconut
8 oz Cream Cheese
2.75 cup, unsifted Sugars, Powdered

Recipe Directions for Coconut Cupcakes

  1. Preheat oven to 350 degrees

  2. In lrg bowl, cream 2 C butter & 2 C granulated sugar until light & fluffy

  3. Add eggs (4), one at a time, beating well after each addition

  4. Mix in 1.5 tsp ea vanilla & almond extracts

  5. In another lrg bowl, combine 3 C flour and 1/2 tsp ea baking powder, baking soda, and salt

  6. Add butter/sugar mixture to flour mixture in 3 batches, alternating with 1 C coconut milk

  7. Stir in 1 C flaked coconut

  8. Fill muffin cups 2/3 full w/batter

  9. Bake until toothpick inserted in center comes out clean, about 15-20 minutes

  10. Cool 10 minutes & remove muffins from pans, then cool completely

  11. In medium bowl, beat 8 oz cream cheese, 3/4 C butter & 1/2 tsp ea vanilla & almond extract until smooth

  12. Gradually beat in 2 3/4 C powdered sugar

  13. Frost cupcakes & sprinkle with remaining coconut

  14. (Optional - toast the coconut that is used to sprinkle on top of cupcakes)
