Recipe Ingredients for Coconut Crowned Cappuccino Brownies

6 ounce semisweet chocolate, coarsely chopped
1 tbsp coffee (freeze dried)
1 tbsp water (boiling)
3/4 cup all-purpose flour
3/4 tsp cinnamon (ground)
1/2 tsp baking powder
1/4 tsp salt
1/2 cup sugar
1/4 cup butter or margarine, softened
3 large eggs
1/4 cup whipping cream
1 tsp vanilla
3/4 cup coconut, flaked & divided
1/2 cup semisweet chocolate chips, divided

Recipe Directions for Coconut Crowned Cappuccino Brownies

  1. Preheat oven to 650*F. Grease 8-inch square baking pan; set aside.

  2. Melt chocolate squares in small heavy saucepan over low heat, stirring constantly; set aside. Dissolve coffee in boiling water in small cup; set aside.

  3. Place flour, cinnamon, baking powder and salt in small bowl; stir to combine.

  4. Beat sugar and butter in large bowl with electric mixer at medium speed until light and fluffy, scraping down side of bowl once. Beat in 2 eggs, 1 at a time, scraping down side of bowl after each addition. Beat in chocolate mixture and coffee mixture until well combined. Add flour mixture. Beat at low speed until well blended, scraping down side of bowl once. Spread batter evenly into prepared baking pan.

  5. For topping, combine cream, remaining 1 egg and vanilla in small bowl; mix well. Stir in 1/2 cup coconut and 1/4 cup chips. Spread evenly over brownie base; sprinkle with remaining 1/4 cup coconut and chips.

  6. Bake 30 to 35 minutes or until coconut is browned and center is set. Remove pan to wire rack; cool completely. Cut into 2-inch squares.

  7. Store tightly covered at room temperature of freeze up to 3 months.
