Recipe Ingredients for Coconut Creamed Gulf Shrimp Over Rotini Pasta

1 pound shrimp, peeled and cleaned
1 hot pepper, poblano diced
1/2 yellow bell pepper, diced
1/2 red bell pepper, diced
1/2 red onion, diced
1 teaspoon Kosher salt
1 teaspoon black pepper
2 teaspoons cilantro, chopped
13 1/2 ounces Lite Coconut Milk
4 tablespoons lime juice
1/2 teaspoon crushed red pepper
2 teaspoons garlic
2 tablespoons butter, unsalted
1 pound rotini pasta, cooked

Recipe Directions for Coconut Creamed Gulf Shrimp Over Rotini Pasta

In a medium sauce pan, saute' Poblano pepper, bell peppers, and onion in butter until tender, about 5 minutes. Add shrimp, salt, black pepper and crushed red pepper. Cook another 5 minutes stirring constantly. Add lime juice and coconut milk, stirring constantly on medium-high heat. Cook until reduced by 1/2 and mixture starts to thicken, about 10 minutes. Serve over pasta.
